Judging by the line that is always out the door, this has to be one of the most popular burger joints in town. I like it and think that they make a fine burger; I almost always get the Buddy Holly burger and wash it down with an old fashioned milk shake. I think that there are plenty of places in town that make better burgers though - Casino El Camino, the Roaring Fork, and Billys on Burnett all come to mind. I guess that I am going with 2.5 stars since good hamburgers are a dime a dozen in Austin.
Remember when you were like 7 years old and you insisted you could cook after seeing the Swedish chef from the Muppets cook up a stew? You'd throw a bunch of random crap in a pot (like a lemon, a box of pepper, a cup of water, 3 pasta noodles, and a ketchup packet) and then triumphantly bring it to your siblings or parents or startled mailman and insist they try some. That's what the chili is like here...and seems to be made nearly with the same care. Actually...strike that...that's what most everything here is like.
The burgers are dry, the fries soggy, the onion rings a fried block that falls apart as you attempt to pry them loose from the rest. I tried a chili dog here once and by the time it was delivered to me, the watery chili had nearly completely dissolved the bun and the checkered paper beneath it making the normal method of consumption impossible. It's also somewhat expensive for what you get.
Overblown, overplayed...maybe they were good once, but trumpeting that you were the only business that survived after a natural disaster is not an automatic thumbs up for food preparation.
Also, the pack-you-in-like-sardines mentality is annoying to anyone larger than a child. I think the guy behind me banged my chair no less than 5 times (accidental) because of our proximity.
No thanks...I'd rather save my casheesh and buy the fixins to make myself a burger at home.

If I was to open a burger place I would want it to be like this one. A few years ago it would have gotten a full 5 stars. The burgers are really tasty, although it seems like they have gotten smaller in the last couple years. The fries are great and the shakes are really good.
the decor recalls an era gone bye of the old greasy burger meets hippy Austin scene.
It is not healthy, nor should any burger place be. I wish veggie burgers where outlawed. Don't go to any burger place and order a veggie burger. I won't go to a vegetarian place and order a burger.
Not too expensive.
Wait staff is always friendly.

Hut's has an impressive burger line up and they'll cook them however you want. I love upgrading to the buffalo meat. Whenever I eat at Hut's I almost always get a burger of some sort with their marvelous onion rings. I can't even remember the non-burger meals I've eaten there, but I know I've never left unhappy. The burgers are so good though they kind of push the rest out of my memory.
To the point: If you love burgers, Hut's is a must.

Sometimes, for no good reason, things just slip through the cracks. I never read any Zadie Smith. I never saw that movie with Tom Hanks where he's suck on a deserted island. And, even though I've lived in Austin since 2003, I never went to Hut's until last night.
We had to wait for a table for a few minutes, and I lost track of all the crazy amounts of awards they've won. I was expecting to have reached burger nirvana, at this point. Maybe they make photocopies so like, best burger '98 is really on the wall 4 times? I didn't check to make sure.
Our server got cut halfway through our meal, and both the first and second servers were most excellent. It was a seamless transition- the new guy even knew who was drinking what. That really impressed me, as a former server. These kids knew their trade.
I inhaled my veggie burger, largely because I was starving, but also because it was good. It's kind of hard to mess up a veggie burger, though.. unless you're Blue Star Cafeteria. Thinking about what Laura M. said, I have to agree- veggie burgers are better at Phil's. Their onion rings are seriously dry, too- I can't believe they're award-winning, but signs on the wall confirmed it. I liked the atmosphere and service the best, and had a nice little time. I'd go back, but probably wouldn't be the one to suggest it.

It's like the long-time friend you've had circling around you like a satellite even though you know your relationship has long since played out.
But you need to start questioning the quality of your friendships, what you're getting back from them and what they're taking from you.
Because how can there be room for new, yummy hamburgers if you are spending your precious time and stomach space at Hut's?

I've visited Hut's a couple of times on various visits to Austin and I have to admit that I haven't been that impressed. They win Best Hamburger's all the time, but I think Phil's are waaay better.
I tried the blueplate special this time, which was chicken fried steak. I've definitely had better and the fried okra was slimy.
I will say that the service was awesome and even though it was packed at lunch, we were able to get a table for 4 quickly and our food was out fast.

If you are an OCD freak like me you know that every area of your life has to be perfect or at least fall into a category, a file if you will and I know you will. Making decisions is important. I can make a life decision at the drop of a hat, but when deciding where and what to eat, it's a whole different ball game. I'll be headed to one place, then pull over and ask myself if I really want to go there. I'll say to myself " What's the atmosphere like? How will you feel when you leave? Do you really want a hamburger or is it a taco day?" It's insane.
I also like to try new places by myself. I figure that the less people involved, the less possible fuck ups.
So, I break my rule and take my suedo ex-girlfriend from out of state, who came to visit me cause she wanted some familiar, to Hut's for a much hyped-up burger. She ordered one burger and I ordered another. Everything was fine, no awkwardness, until the food came. Then the OCD freak in me came out. The waitress brought me her burger and gave her mine, that took me 15 minutes to decide to order. I don't like to share or sample someone elses meal. I order what I like and you get what you want, is my philosophy. I know sometimes you have to share to not come off like a prick in certain situations, like a first date, but...
So, we're sitting there and I'm telling her my Mr. Toad's hilarious story, when she bites into her...or rather, the burger she was givin. She stops in mid-chew and asks what's on my burger?
I immediately realize that we were served each others burgers an try to make a quick exchange.
TO FUCKING LATE! She had already bitten into my burger. Now, we have swaped spit on numerous occasions, but it's not about that. It's about the integrity of the damned burger. I make the first bite into my burger and I don't want it defiled by someone elses sloppy filthin pie-hole.
Not a big deal? Maybe, but that's obsessive compulsive disorder for you. Please excuse my french.
Shit, the burger was still pretty good.

I'm a midwestern burger-lovin' gal, and so I wanted to try a Texas-style burger during my first trip to the Lone Star State. The general consensus from my research was that Hut's was the best. While I liked the funky atmosphere and the friendly service, I thought the food was just OK. I ordered the basic burger with homemade BBQ sauce. The sauce was tangy and tasty, but the burger and bun were nothing to write home about.
At virtually every other burger joint in the world, you get fries or something with it. Here the side orders are a la carte. We of course had to try the Texas-sized onion rings. While quite impressive to look at, the panko-style breading was sort of bland.
Oh well.

I want to give this place 4 stars, but feel it's my duty to temper down a bit of the hype, as it's about 3.5... but the problem is the history and some sorta default Austinite "go to Huts" that can make this place so crowded... in fact, too crowded. Forget the $1 upgrade to the longhorn burger, while you are at. Shakes are very good, not too sugary, as many natural ice-cream made parlour-style shakes can get. The bun can make the burger, and they miss the mark here... and fries are okay'ish. The Tubby's Tickler I'd give 4.5 too...
Parking on the weekends is a pain.

You go and eat here because people in Austin tell you so. The burgers range from barely decent to pretty good but the pretty good times are significantly outweighed by the meh, it's ok times. I can make a better burger so that's usually my test when I eat at a burger shop.
The bun on their burger isn't special and most places who know how to cook a burger and tout themselves as a burger joint knows the bun plays a huge role. I think more people who leave out Huts when people want to know where to eat in Austin, it's seriously average at best on occasion and it's crowded. Save yourself the time and go to Dirty's if you want a better burger and not the wait.

Hut's is one of those places where I've only had a few things on the menu. This is because the things that I have had are so ridiculously good, that branching out seems like an unnecessary risk. Stick with the burgers. I once tried a hotdog and had some serious buyer's remorse. Not because it was bad, but because it wasn't the Theta Special or the Richie Valens, two of the finest tasting burgers on earth.
Also, I like to stick with the onion rings. If you go, split a half order with a friend, since I defy you to finish a burger and several of these spare tire-sized rings in one sitting.
So go to Hut's, find your special burger and don't try to fly too close to the sun, Icarus. Fantastic is good enough...

I have to agree with Kade B. I went to Hut's twice and both times, I was very disappointed in their burger and their vanilla shake. Honestly, McDonalds' shake gave this shake a run for its money. My burger was flavorless and tough. How do you ruin a burger...AND you are a burger place?? No Huts for me...sorry.
Best VEGGIE burgers in town, and damn good onion rings. Veggie burgers, I think, are homemade and probably the best I've ever tasted. I usually get the veggie burger with swiss, mushrooms and sour cream. Yum. The onion rings are cooked to near-perfection, thickly sliced with a crispy breading with a black pepper kick. Being a vegetarian I can't comment on the meat burgers but several of my meat eater friends swear by them.
The other reviewers are right -- this place does get _very_ crowded at times. But can we really penalize a place for being, um, popular? No. Just don't go at peak times, people. By "peak times" I mean lunchtime, dinnertime and weekends. Veggie burgers are two-for-one on Monday -- if you hit Hut's for an early dinner (like before 7pm) there usually isn't a wait.

Having been here several times over a DECADE, i can honestly say, yuck! Hamburgers are SMALL, overpriced and anything but tasty. If you want a hamburger in austin, go to Frans or Dans or even Wallys. And yes, this place is way too crowded to enjoy your meal. Sorry folks, this place lives on its past hype and not on the current food they offer. Actually they have lived on hype for many, many, many years now.
And in response to other posters...huts is NOT where Austinites go for hamburgers! i've lived in austin on/off/on again since 1968 and this is NOT the place where we go. It is the place where people who VISIT austin go to or those that have just moved here go to. Us long term austinites know better!
Go elsewhere and enjoy.
Wednesday 2-for-1 hamburgers was very special at the beginning of my marriage. With the combining of checking accounts and the realization that there really wasn't that much disposable income after savings and paying bills, my husband and I went on the prowl for 2-for-1 nights at places around town.
The only caveat of course is that the burgers must be the same. But with 20+ different types of burgers to order, it's not a problem to find one to agree on.
My only disappointment at Hut's was the Longhorn natural beef burger. I thought it was flavorless. I prefer the regular burger or the veggie burger. But on Wednesdays, veggie is not an option as the hubbs will not eat veggie burgers.
I am not a fan of onion rings in general, but my husband loves the ones at Hut's. I prefer their fries with my burger. The best part though is sharing a chocolate milkshake. However, we have to make it a rule to not order it until after the burgers come or else it's gone before they get there. I am also a fan of all the cherry and vanilla sodas.

I ate here for the very first time last night. I had an Arnold Burger with guacamole, bacon & jack cheese. It was really good but then I am a sucker for anything with guacamole. I also shared a chocolate malt, onion rings & fries ( I know all four food groups, right?) . Everything was good & tasty, but not the best burger I had ever had. Service was attentive and the waitress showed up with a pile of extra napkins just as my guacamole burger was about to ooze down my face. Perfect timing on her part. It is however REALLY LOUD here. I may be back but I'm pretty sure I can find a good burger in a slightly quieter environment. Cute funky decor here as well, but also a little cramped for space.

What a letdown. I had some high expectations for Hut's, and they just didn't live up to them.
Service started out slow slow sloooow. Granted it was around noon on a weekday, so they were busy, but it took over 10 min. before we were greeted at out table, and it seemed like a long time before our beverages came out, too. I ended up leaving without finishing my meal because my lunch hour was up, and the parking meter was going to expire.
Once the server finally got our order, the burgers ($6-8 each) actually didn't take too long. Everyone got exactly what they ordered, too. My #7, a bacon cheeseburger, was pretty good: hot, ample meat patty, decent assembly, good cheese meltage. The meat wasn't seasoned much, but it seemed decently lean. However, 2 people in our group ordered the dagburger (double meat, double cheese). Not so good. The components exceeded the bun's capacity, and the sloppy assembly exacerbated the situation. That burger was structurally unsound, and it looked like a real pain to eat.
I love potatoes. Baked potatoes, hash browns, tater tots--I love all forms of this wonderful tuber EXCEPT the soggy spongy fries I got at Hut's. Ick. They were squishy and bland. Not good and not cheap. Side items have to be ordered a la carte at Hut's.
It's not a bad place, but with so many other good restaurants to try Austin, I probably won't go back to Hut's.
I almost forgot! The bathroom light was burned out, making my trip to the potty a bit precarious.
UPDATE: I have developed a mysterious stomachache which has persisted for over 3 hours. The only other thing I ate today was a Clif Bar. Hut's, what have you done to me!?

I went to Hut's the other day and honestly I was not that impressed. We came in early, before the dinner rush and were seated quickly. We ended up sitting at the table to the right as you come in which is like half a wedge thing. It would have been fine but there was another party sitting at the other half a wedge and there was no one blocking the view of them. It seemed a bit awkward watching other people all the time. I ordered the #6, the Chubby Chuck, which came with onions, pickles, a hickory sauce, grated cheese, and the burger. It came out fairly quick but I was not too thrilled with it. The sauce completely overpowered the burger and even then I don't think the burger would have been all the flavorful. We ordered both onion rings and fries but I probably could have gone without both. The onion rings were enormous but the breading was very bland and did not have much flavor to it at all. The fires were nothing special either, just your typical burger joint fries. Being from San Antonio originally I guess my burger standards are set high with Chester's and the even better Biff Buzby's. Hut's just didn't meet the standard.

Hut's is what it is. A decent burger place that get's overcrowded because of its reputation and location. In fact, I should probably rate it a one to convince people to stop going. I really enjoy two burgers on the menu, the Fats Domino (cajun spices, japs, cheese) and the Theta (mayo, pickle, barbecue sauce). The fries are hit and miss. The milkshakes are...well...great, but you should really cross the street and get a coma-inducing cheesecake shake from Katz's. The two for one burgers are a great deal, and I've been told that the onion rings are good but I don't care for onion rings, so I guess I'm unamerican.
I've read some reviews that complained about the wait at noon on a weekday. Really? You don't say. I guess next you'll tell me that Mopac gets crowded during rush hour. The wait at Hut's can be bad, but if you don't have the time to eat out, go drive through Sandy's or P.Terrys. I've never had a problem with waitstaff, and the parking is...well...Austin parking. Deal with it....or don't. Whatever.

I can't speak for others (too much trouble getting our mouths to sync) but I like Hut's. I'm a burger guy, and there are enough options to be had here that your average (or even atypical) burger guy can find something more times than not to sink his teeth into.
Parking can be an issue -- this place features a tiny parking lot squeezed between Frank & Angie's and West 6th, so be prepared to execute a 27-point turn in order to get that spot you like, but that said, honestly, Hut's gets bandied about as an Austin institution for a couple of reasons, namely A) it's been around a long time and B) it's been the same a long time. That can mean that with changing tastes, some folks won't make the trip any longer. And to be honest, I'm not here as often as I'd like to be.
But I'm coming back, because for this burger guy, familiarity breeds a smile. And sometimes you're ready to sink your chompers into a lunch that could make a metronome jealous.

Hut's Hamburgers is a legendary Austin hamburger joint that doesn't live up to the hype. According to Hut's official website, it was voted the best burger in Austin from 1987-1996. Now that's amazing. In fact, I can hardly believe it. But it's undeniable that that winning streak ended over 10 years ago, and what I experienced was the most mediocre, tasteless burger I have eaten in recent history.
The meat was flavorless, even after 2 applications of salt - which I would only attempt under the most dire of circumstances. The shredded lettuce was not fresh, which created a day-old, leftover burger effect - one that should never be experienced, much less on the first go-around. The burger had a poor foundation and fell straight apart. There was literally not one good thing about it. I am deeply sorry to share this news with my esteemed Yelp colleagues, but it would be irresponsible of me to sugar-coat this situation.
And it gets just a little worse before it gets better: the fries were the limpest, noodliest, most miserable potato sticks to ever see hot grease. And were it not for extreme hunger (and a particularly persistent inkling of propriety), the $5 basket might have found it's way through the air right back into the kitchen: a moving manifesto of dissatisfaction.
Hut's, you have failed to impress me.

I was halfway through my Hut's burger when it suddenly dawned on me. I wasn't really going there for the food but because of the hype. As an Austinite, I was expected to frequent the place and love it. I know Hut's draws legions of fans for its famous burgers but I think the reputation is better than the actual food. Don't get me wrong - Hut's serves up a decent burger - but better burgers can be found.

Well, I know adding a 56th review won't change anyone's mind, but I like putting my two cents in. Really, this should be 3.5 stars, but I round up.
Its a good honest meaty burger, albeit somewhat bland. I got the Buddy Holly, which is a burger with all the veggies - tomato, lettuce, pickles, etc -- and the veggies sort of droned out the meat. It was really good, just no "wow" factor. We also had a double meat burger and a Boodie burger - which was mushrooms and cheese -- that one had some wow - very yummy mushrooms. Burgers were very good, mind you, just not "fantastic". Maybe they weren't hot or seasoned enough. These aren't burgers you dream about. I'm still looking for those in Austin. We also had a chocolate shake that was terrific, though.
I don't know why people are crazy for these onion rings. I didn't care for them. They had very thick, cardboardy breading. I like a thin batter so you can really taste the onions. I also had to salt everything like crazy.
The counter service was stellar -- counter dude did his job perfectly and super friendly, too. Glad we hit the counter -- no way I would have been a happy lady had I waited the projected 30 minute wait for a table.

Though I realize it's contrary to the spirit and purpose of Yelp and other similar review sites, the Latinism nevertheless holds true: de gustibus non disputatum. It apparently holds true about Hut's.
I went to Hut's ignorant of its reputation---for better or for worse---and out of a quasi-healthy compulsion to avoid beef, I got the veggie burger. Nothing fancy: plain as can be, with lettuce and tomato and a side of chipotle mayonnaise (which I realize is a cheap trick, easily recreated by any home chef---but I'd rather not live life carrying around my own mayonnaise, thanks very much).
It was, hands down, the best veggie burger I've ever had. There is certaily a falafel-esque texture to it---a texture which undermines any of the menu's claims to the burger being "100% fat free"--but, man, who doesn't like falafel? I was in absolute heaven; I ate a grotesque amount of chipotle mayonnaise, all becuase that burger was just so good. So, while I can't vouch for beef, I wouldn't vouch for the service, and others appear to detract this, the god of all veggie burgers---that's totally cool. Y'all go get your veggie burgers someplace else---that leaves more at Hut's for me.

I heard about Hut's on the Stern's Roadfood.com and just had to try it when I visited Austin. The atmosphere is cool, but I have to say, the burgers were just so-so I got the buffalo burger and it was tough and a little flavorless. However, the onion rings made up for all that. They were so good, I think they were breaded and they had black pepper in the coating. We got a half and half basket of the fries and rings, and I wish we'd just got the onion rings. The fries were nothing special But oh those rings! So crispalicious yummy I gave it 4 stars even though I would have given it 2 based only on the burger and fries. How do you spell disappointment? H-U-T-S. For all I've heard about this place, it certainly does not live up to the hype. A definite improvement is needed if I'm ever to revisit this place. They do have a veggie burger, but according to my vegetarian friend Paul, their veggie burger is awful and not meant for people to eat. At best, the food at Hut's is marginal, and at worst would taste better coming out than going in. I'll give 2 stars, simply because it's still not as bad as McDonald's. I've often said that Hut's is the "Emperor's New Clothes" of Austin casual dining. I confess myself to be disappointed every time I've left that place.
Admittedly, I've not tried everything on the menu. The Buffalo burger is supposedly good, but so was every other item that a well-intentioned friend told me that I simply HAD to order.

I was hoping I'd find my new No. 1 veggie burger here. No such luck.
I'd rather eat a thawed grocery store black bean burger plain than try Hut's again. It'd certainly be cheaper.
The patty's mealy, kinda gooey/undercooked in the middle, and tastes a little too much like chickpeas (Which I love. I even make falafel sandwiches at home. I just didn't want a "burger" like that.) The onions and tomatoes were chopped into odd sized pieces -- too big to be easy for one bite, not enough to cover the sandwich surface, and they fell off a lot. The mustard was excessive. The guacamole was just flavorless avocado spread. The bun was OK tasting, but it was mooshy. The shredded cheese was just icky. A one-star sandwich.
My friend's real meat burger with bacon, he said, wasn't as impressive as he's had there in the past. He was pretty thrilled to get a Coke with vanilla added, instead of premade Vanilla Coke, so that's cool. One star for that. I didn't try it though. I just had water.
Plus he was excited that the place reminded him (I promised I'd include this in my review) of "a place Archie and Jughead would hang out." I guess Archie was cool with sitting at an eight-person table with five people he didn't know, because they did that to us even though there were a bunch of 2- and 4-tops empty and clean.
Which brings me to the biggest disappointment. The fries. I could tell from the moment they came out that they weren't going to be much better than Jack in the Box fries, which is what they reminded me of. And I was right. Only a few of them were plump enough to bother sticking in my mouth, and they didn't hold up without ketchup, which all truly delicious fries do. I found myself dousing every bite in ketchup, much to my chagrin.
Also, the straws are too short for the giant drinking glasses. They only stick up about a quarter inch from the top, making it difficult to maneuver. What's up with that?

I don't know why this place only has 3 1/2 stars, it's pretty good.
Yes it's greasy, yes it's fattening, yes it's bad for you... but THAT'S WHAT BURGER JOINTS ARE FOR! My sister and I loved the burgers here, and we will definitely come back if we are ever looking for a place to enhance our love handles.
There are so many options on their menu. For example, they have 20 different types of burgers with all kinds of condiments on each one. This makes for a confusing choice, but if you like options, this is the place for you.
My burger was scrumptious and the fries were great too. I ordered my burger with Texas natural grass-fed beef (for an extra $1.25) and I think that made a difference.
I can't vouch for anything else on the menu (sandwiches, salads, etc.). because I haven't tried them. However, for all you vegetarians out there, they do have veggie burgers.
The only reason I am rating Hut's 4 stars is because it's not as good as Dan's burgers (see my other reviews). However, the burgers are great, and if you are in the area, you should definitely stop by.
Verdict: Great burgers, decent prices, lots of choices, decent service, cool environment (old town diner like). Check it out if you get the chance!

I am probably the only one out there that isn't a fan of Hut's. There burgers are not even average. The place is cute and they have a nice bar but the burgers aren't good. I am always amazed when I drive by and there is a line outside. Dirty's is much better!
